Blackberry oaty slice recipe
Friend of the Forest, Jane, has shared one of her favourite recipes using blackberries she forages the Forest!
Ingredients
- 100g oats
- 100g light brown sugar
- 300g flour
- 100g ground almonds
- 40g of walnuts, almonds, seeds, etc. (optional)
- 175g melted butter (dairy or vegan)
For the filling:
- 200g blackberries
- 50ml water
- 2 tablespoons sugar or maple syrup
Method
- Pre-heat the oven to 130C fan.
- Start by making the filling. Add all the filling ingredients to a saucepan and slowly heat it up. Mix continuously until it’s a lovely syrupy jammy consistency then set to one side.
- Next add all the dry ingredients into a bowl and mix in the melted butter.
- Put half of the mixture into a shallow tin and press it down. Mine is 31cm x 18cm.
- Spoon the cooled filling mixture on and spread into an even layer.
- Crumble the rest of the oat mixture on top.
- Bake for about 45 minutes until it is a lovely, golden-brown colour.
- Leave to cool on a cooling rack. Once cooled, cut the mixture into slices and serve with hot custard.
