Blackberry oaty slice recipe

Friend of the Forest, Jane, has shared one of her favourite recipes using blackberries she forages the Forest!

Ingredients

  • 100g oats
  • 100g light brown sugar
  • 300g flour
  • 100g ground almonds
  • 40g of walnuts, almonds, seeds, etc. (optional)
  • 175g melted butter (dairy or vegan)

 

For the filling:

  • 200g blackberries
  • 50ml water
  • 2 tablespoons sugar or maple syrup

Method

  1. Pre-heat the oven to 130C fan. 
  2. Start by making the filling. Add all the filling ingredients to a saucepan and slowly heat it up. Mix continuously until it’s a lovely syrupy jammy consistency then set to one side.
  3. Next add all the dry ingredients into a bowl and mix in the melted butter.
  4. Put half of the mixture into a shallow tin and press it down. Mine is 31cm x 18cm.
  5. Spoon the cooled filling mixture on and spread into an even layer.
  6. Crumble the rest of the oat mixture on top.
  7. Bake for about 45 minutes until it is a lovely, golden-brown colour. 
  8. Leave to cool on a cooling rack. Once cooled, cut the mixture into slices and serve with hot custard.
